Observed knob to turn on cold water for the handwash sink in the kitchen area stuck/not able to turn on and is in need of repair. Back door to the outside, located in the kitchen area of the food facility is being propped open with potential for entry of insects, rodents, and other animals. Floors, walls, equipment in the kitchen area of the food facility is dirty/greasy and in need of more frequent cleaning.

Brother Joe's Pizza, 6051 Allentown Blvd. Harrisburg, Follow-up, April 24. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food Employee did not follow proper handwashing procedure. Food employee did not wash hands for adequate amount of time of at least 20 seconds. Food Employee observed donning single use gloves without a prior hand wash. Open employee's beverages containers was observed, through-out the facility, a food preparation area. Food employees observed in kitchen area, not wearing proper hair restraints, such as nets, hats. A food employee was observed touching breads - a ready to eat food - with bare hands. Observed (shredded white cheese, sauces, dressings, chopped green pepper, salad...) throughout the cooling and freezer units, stored open with no covering. Observed food ingredient storage containers and bottles, through-out the facility, is not labeled with the common name of the food. Observed wet wiping cloths in kitchen area, not being stored in sanitizer solution. Observed open bags of flour stored directly on the floor in pizza prep area, rather than 6 inches off of the floor as required. REPEAT VIOLATION. Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the all cooler unit, is not being date marked. Thermometers for ensuring proper temperatures of food are not available or readily accessible. Observed the following on food contact surfaces: Ice scoop stored next to the ice machine, on an uncleaned surface. Corrected. Ice scoop stored on top of an umbrella in the ice machine, on an uncleaned surface. Corrected. Ice machine with back mold-like substance on the interior dispensing bar and not clean to sight or touch. Green and white cutting board with deeply scored and brownish mold-like substance. Countless pizzas stored in black trash bags, non food grade. Observed gaskets in cooling and freezing unit throughout the facility area, with an accumulation of dust, dirt, food residue. The handwash sink for employees located in the kitchen area, is not convenient and easily accessible, As evidenced by the observed fault, an employee washing his hands in a food preparation sink. Ceiling tiles missing in the kitchen area, and need replaced. Old unused equipment/utensils stored in the food facility, should be removed or stored clean and covered. The following areas of the food facility are dirty, dusty, and in need of cleaning: ceiling tiles and vents throughout the kitchen areas; walls under dish machine.

Milk was discarded by person in charge. Corrected on site. Loose rubber door gaskets observed on the refrigerator in the prep room and are in need of replacement. Observed cooking utensils, a food contact surface, stored in pan with accumulation of crumbs and food debris. Corrected on site.
